Mauviel® M’heritage Copper and Stainless

Crafted for centuries in the French village Villedieu–les–Poêles (“city of pots”), Mauviel is built on a rich family heritage made with a true culinarian in mind. Requiring only a low to medium setting, the substantial polished copper exterior heats quickly, tempered by an interior layer of non-reactive 18/10 stainless steel for superior control.

Calphalon® Contemporary Stainless

Durable, professional-quality pans show off designer curves in a fine satin finish. Tri-ply construction features two layers of nonreactive, surgical-quality stainless steel encasing a full aluminum core that covers the bottom of the pan and goes all the way up the sides for even heating through denser foods.

All-Clad® Stainless

Professional four-star cookware that's dishwasher-safe. Tri-ply construction features an extra-thick aluminum core that covers the bottom of the pan and extends up the sides for superior heat conductivity and even heat distribution through heavier foods. Interior layer of 18/10 stainless steel won't react with foods. Smooth, vitrified porcelain enamel surfaces are impervious to acid, alkali, odors and stains. Tight-fitting lids create a "blanket" of heat for even cooking. Mario Batali Enameled Cast Iron

Calphalon® Unison™ Slide and Sear Nonstick

Scanpan®

Materials and Construction

Hard-Anodized Aluminum

Aluminum conducts heat quickly and evenly without hot spots. An electrochemical process hardens, or anodizes, the surface to make it more durable. A great choice is Cuisinart® MultiClad Unlimited™ with its exclusive Heat Surround™ technology and dishwasher-safe ArmorGuard™ anodized aluminum exterior that cushions heat to eliminate hot spots.

Copper

Superior heat conductivity and a quick response to temperature changes make copper the ideal element for cooking delicate foods and complex dishes. Extremely energy efficient, copper usually requires only a low or medium heat setting. Mauviel® M’heritage Copper and Stainless cookware embodies the rich heritage of this material with a copper exterior that heats quickly, tempered by an interior layer of nonreactive 18/10 stainless steel for superior control.

Tri-Ply Construction

Tri-ply construction is the ultimate for the serious cook. Three layers of metal are sandwiched not only at the core, but all the way up the sides of the pan to conduct heat through denser “big” foods like stews and soups. For example, Le Creuset Stainless and All Clad Tri-Ply Stainless combine the beauty and optimum heat conductivity of an 18/10 stainless steel exterior, a non-reactive stainless steel interior, and an aluminum inner core for expert control.
