It always amazes me how just a few simple touches of greenery can instantly create a festive holiday vibe. I dressed the table with Crate and Barrel’s long needle pine garland for a simple, rustic touch. I used the Silva oval platter as the base for my envelope addressing station. I prepared an easy drink station on the buffet showcasing one of my favorite holiday cocktails—the Moscow Mule. A self-serve bar makes it easy for guests to help themselves and frees me from playing bartender!

Moscow Mule Recipe

Ingredients
Ice cubes
1/4 cup vodka
1 tablespoon fresh lime juice
1/2 cup chilled ginger beer
1 lime wedge

Directions
Fill a chilled copper mug with ice. Add vodka and lime juice, then ginger beer; stir to mix. Garnish with lime wedge.

White Bean, Kale and Squash Minestrone Recipe

Ingredients

2 tbsp. extra-virgin olive oil
1 large onion, chopped
2 cups peeled & cubed butternut squash
1 tsp. finely chopped rosemary
1 pound kale, stems removed & leaves sliced
4 cups chicken broth
Small tube-shaped pasta
1 cup white beans, rinsed & drained
Kosher salt & freshly ground pepper
Parmesan cheese for serving
Directions
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, cover and cook, stirring occasionally, for 4 mins. Add the butternut squash, cover and cook for 5 mins. Add the garlic and rosemary and cook, stirring, for 1 min. Add the kale and cook until wilted, 5 mins. Add the chicken broth, then cover & simmer for about 10 mins. until the squash is tender. Meanwhile, cook the pasta until al dente. Use a slotted spoon to transfer to the soup. Add the beans and a generous pinch of salt & pepper, and simmer for 5 mins. to let the soup slightly thicken. Ladle the soup into a bowl, top with grated parmesan and a drizzle of olive oil.
