This amazing razor-sharp knife is created in Seki City, Japan's 700-year-old center for samurai swords. Durable VG10 steel core is clad on either side with 16 layers of high-carbon stainless steel for maximum strength and stability with a "ripple" Damascus effect. Oblong Pakkawood handle nestles comfortably in the hand; stainless handle cap embossed with the Shun logo adds balance and beauty. This knife offers great edge retention and will never rust or corrode if properly maintained. Flexible, stick-resistant blade is stamped, hand-ground to an exceptional 22-degree angle, then hand-polished. The Western-style blade is especially designed to cut through bones and joints.
