This amazing razor-sharp knife is created in Seki City, Japan's 700-year-old center for samurai swords. The Ken Onion knife bears the name of its designer, who based his revolutionary approach to ergonomics on observation of professional chefs. The resulting unique angle and curves reduce effort as the blade literally glides through foods. Incredibly thin, flexible blade is forged from 16 layers of steel and hand-ground to an exceptional 16-degree angle. Hand-polished knife with Shun's "ripple" Damascus rust-free finish stands alone in a custom bamboo rest.
