The Story

Designed and engineered by Robert Welch Designs in the English Cotswolds, this Signature santoku knife (Japanese chef's knife) offers the home chef a unique value with a new hybrid of European and Asian cutting-edge technologies. Its special blade slices, dices and minces with clean repetitive action, allowing the food to fall away from the blade. Rated in the top 1% of all brand knives by CATRA (Cutlery and Allied Trades Research Association) for their initial sharpness and edge retention, Signature knives have won major international design awards including the "Highest Possible Grade Achieved" by the Craft Guild of Chefs. Fully forged and robotically engineered, Signature knives feature German stainless steel blades—each uniquely curved to optimize the cutting action for each knife's function. Engineered using World Edge Geometry™, blades are honed, hardened and tempered to razor sharpness with a precision 15-degree edge angle that cuts and slices effortlessly; full-tang blades extend the entire length from tip to heel as if it's custom-fit to the hand.

Rated 4 out of 5 by from Go to knife I bought this knife about 4 months ago and it is my go-to knife. My only problem is that the initial sharpness dulled within a couple of months. The front and back points are still pretty sharp but the rest of the knife requires a "sawing" motion to get through my veggies.

Rated 5 out of 5 by from Knife to know you I've had this knife for a year and a half now and it has made prepping and cooking a breeze. The handle is rounded and smooth making it extremely comfortable to hold in your hand especially when you have a lot of food to prep. The blade is very well balanced and exceptionally sharp. We have a nice ceramic knife that I thought was unbeatable... until we got this. I use this to do just about everything, from dicing veggies to coring a pineapple. You won't regret the purchase.

Rated 5 out of 5 by from Love this knife I absolutely love this knife. Used to be a Shun fan but having used the Robert Welch Chef knife for the past year I am a convert. Recently bought this gorgeous addition and it did not disappoint. Obviously the style, deisgn of these knives is unique and chic but also slot into the natural shape of the hand. For those who love spending time in the kitchen, I would highly recommend the Robert Welch knives. Knife sharpener on my Christmas list!

Rated 5 out of 5 by from My New Favorite I received this Santoku knife as a gift and it has quickly become my "go to" knife for chopping and slicing. The handle design, size and weight keep the blade balanced, comfortable and really fun to use. After experiencing the quality of Robert Welch, I realized that the other knives in my block need some serious upgrading. Not many kitchen items are so good that I feel compelled to write a review, but this one definitely has me impressed.
