The Story

This amazing razor-sharp knife is created in Seki City, Japan's 700-year-old center for samurai swords. The "ripple" Damascus rust-free finish is achieved by forging 16 layers of steel on each side. Flexible, stick-resistant blade is stamped, hand-ground to an exceptional 16-degree angle, then hand-polished.

Rated 5 out of 5 by from Comfortable and sharp I've had this knife for about year, so it's gotten quite a bit of use. I have to say that I love this knife a lot.The D shaped handle is very comfortable and despite being wood, is not slippery at all (even when my hands are covered in chicken gunk). I also find that I have a lot of control with the knife.The blade angle is a western/eastern hybrid, so you get the best of sharpness and edge retention. In practice, I actually find the knife to hold a decent edge as long as you hone it every once and a while. This knife holds an edge better than the Victorinox and Henckels I've used.The only downside to this knife is the price. It's expensive and you could probably find a comparable knife for less. However, if you take care of this knife, it should last you a long long time.

Rated 5 out of 5 by from Excellent Chef's Knife I have the 10" chef's knife. While it's a bit big for small hands, it does a great job of delicate slicing. I use my 8" Wusthof more often, but break out this Shun for specific things like slicing meat/fish or for chopping big onions (where I can comfortably get a higher angle).
