The Story

From the makers of Japan's finest cutlery comes this Premier collection with a unique new "tsuchime" finish. Hand-hammered texture creates cavities with an effect similar to hollow-ground, reducing drag for a gliding cut and quick release. Durable VG10 steel core is clad on either side with 16 layers of high-carbon stainless steel for maximum strength and stability. Oblong pakka wood handle nestles comfortably in the hand; stainless handle cap embossed with the Shun logo adds balance and beauty. These knives offer great edge retention and will never rust or corrode if properly maintained. The santoku Japanese chef's knife translates to "three great things": slicing, dicing and mincing.

Rated 5 out of 5 by from Love this knife! I'd heard good things about Shun knives, but I'd also heard they were overpriced, so I went into the store with the intention of buying a different brand. Once I held this one, I knew it was the one for me. It's very well balanced, and now after using it, it makes chopping a breeze. The edge is extremely sharp, and I'm hoping it will sharpen well when the time comes. It's expensive, but it's an excellent knife, and it's the one I'll be reaching for most.

Rated 5 out of 5 by from The Best Knife I have ever Owned When I moved to my own apartment, being a person who loves to cook, I knew I had to get a really great knife. Growing up my mom had okay knives, but nothing amazing, and I know that everyone stresses that you have to have a sharp knife. Knowing the Shun name, and liking the hand-hammered texture I took the plunge. I could not be more pleased. I used this knife almost exclusively for everything. I bring it with me when I cook at my friends' houses. It single-handed saved thanksgiving last year.I've had the knife for about a year, and have had it sharpened once. It keeps its edge very well.
