  • 1/2 cup coconut water
  • 1 cup white sugar

  • 4 ounces pineapple syrup
  • 2 ounces freshly squeezed lemon juice
  • 2 ounces blue curacao
  • 4 dashes aromatic bitters such as Angostura
  • 1 cup frozen pineapple chunks
  • 2 cups of ice
  • Blue food coloring optional

Instructions
Strawberry (Red) Layer
  1. Combine the strawberries and the sugar in a bowl and let sit until the sugar dissolves, stirring occasionally. Place strawberries in freezer to solidify until ready to use.
  2. When the strawberries are frozen, add the liquid ingredients to your blender container, followed by the fruit, and then the ice. Blend on low for a few seconds, then on high for approximately 20 seconds.
  3. Store in the freezer until ready to use.
Coconut (White) Layer
  1. Add the liquid ingredients to your blender container, followed by the ice. Blend on low for a few seconds, then on high for approximately 20 seconds.

  1. Add the coconut water to a heat proof glass and microwave for 45 seconds. When finished, stir in the sugar. Stir the mixture occasionally as it cools. It is ready to use when cool and the sugar has dissolved.

  1. Add the liquid ingredients to your blender container, followed by the fruit, and then the ice. The combination of the pineapple and the curacao naturally produces a greenish-blue. For a truer blue color, add one or more drops of blue food coloring. Blend on low for a few seconds, then on high for approximately 20 seconds.
  2. Store in the freezer until ready to use.
