Ingredients
  • 6 large boiled eggs cooled & shelled
  • 1/2 avocado ripe
  • 2 tablespoons avocado mayonnaise can substitute regular mayonnaise
  • 2 teaspoon lime juice freshly squeezed
  • 1 tablespoon cilantro roughly chopped
  • 1 shallot chopped
  • 1 pinch paprika plus more for garnishing
  • salt and pepper to taste

Instructions
  1. Remove yolks from the hardboiled egg and place in a blender. Add the avocado, mayonnaise, lime juice, cilantro, shallot, paprika, salt and pepper. Puree until smooth. Pipe filling back into each egg white as desired. Sprinkle with paprika.
Recipe Notes

NOTE: If you do not want to pipe the mixture, simply just mash all ingredients together & spoon filling back into the egg whites.
