Ingredients
  • 1 cup each blackberries and blueberries
  • 1/4 cup granulated sugar
  • 1/4 hazelnut meal ground hazelnuts
  • juice of half a lemon
  • Roasted hazelnuts roughly chopped, to scatter
  • fresh thyme sprigs to serve
Hazelnut Pastry
  • 2 cups wholemeal flour sifted
  • 1 cup hazelnut meal
  • 1/2 cup light brown sugar
  • 3 sticks chilled butter diced
  • 3 eggs beaten, plus extra for egg wash
  • 1 tablespoon turbinado sugar for scattering

Instructions
  1. For hazelnut pastry, combine flour, hazelnut meal and sugar in a bowl, add butter and using fingers, rub in butter until mixture resembles breadcrumbs. Add eggs and stir to combine, then gently knead to a smooth dough. Wrap dough in plastic wrap and refrigerate for at least 1 hour, or until required.
  2. Preheat oven to 375. Combine berries with sugar and lemon juice in a bowl, stir to combine.
  3. Roll out chilled pastry on a lightly floured work surface to a 13 inch diameter circle and place in a baking dish, lined with parchment. Scatter hazelnut meal over pastry, leaving a 2 inch border.
  4. Arrange berries over hazelnut meal. Fold uncovered edges over, brush with egg wash and scatter with chopped hazelnuts and a sprinkle of turbinado sugar. Bake until pastry is golden and berries are juicy and tender (40-45 minutes). Serve with fresh thyme sprigs and fresh cream or ice cream.
