  • 3 tablespoons light corn syrup
  • 2 tablespoons water
  • 2 tablespoons bourbon
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla
  • 8 cups popped popcorn

Instructions
  1. Preheat the oven to 200F.
  2. Add the butter, brown sugar, salt, corn syrup and water to a pot over high heat. Stir until the butter has melted and sugar has dissolved.
  3. Allow to boil, untouched for 5 minutes. Swirl the pan if hot spots start to develop.
  4. Remove from heat and stir in the bourbon, baking soda, and vanilla.
  5. Spray a large roasting pan or baking dish with cooking spray.
  6. Add the popcorn. Drizzle with caramel sauce and toss until well coated.
  7. Cook for 15 minutes, stir and cook for 15 additional minutes.
  8. Spread the caramel corn on a sheet of wax paper in an even layer to prevent clumping. Allow to cool before serving.
