  • 1/2 tsp vanilla extract
  • 1 heaping cup unsweetened shredded coconut

Instructions
  1. Preheat oven to 350 degrees F. In a small mixing bowl, combine flour, baking soda, and a pinch salt.
  2. In a large mixing bowl, cream the butter and sugar until smooth. Add egg and vanilla extract and blend using a hand mixer.
  3. Add flour mixture and blend well. Add shredded coconut and fold until nicely incorporated. Do not overmix.
  4. Scoop level tablespoons of dough and roll into balls. Arrange balls about 2 to 3 inches apart on a baking sheet. Bake until lightly golden, about 10-12 minutes.
  5. Option: Slightly flatten the dough to make ice cream sandwich cookies.
  6. Let cool for a minute or two before transferring the cookies to a wire rack. Let cool for 5 minutes before serving.
