  • 3 cups of All Purpose Flour
  • 1 teaspoons ½of Baking Soda
  • Pinch of salt
  • 3 large eggs
  • 1 cup of Milk
  • cup ¾of Plain Yogurt
  • Zest and juice of 2 medium sized oranges
  • 1 cups ½of dried Cranberries
  • cup ¾of roughly chopped pecans

Instructions
  1. Preheat the oven to 350F.
  2. Spray two muffins tins with vegetable oil and set aside.
  3. Mix together the flour, baking soda and salt in a large bowl. In another bowl, whisk together the eggs, milk, yogurt, orange zest and juice.
  4. Make a well in the center of the flour mixture and slowly pour in the wet ingredients, stirring to combine. Fold in the cranberries and half of the pecans.
  5. Spoon the muffin mix into the prepared tins and sprinkle with the remaining pecans. Bake for 25-30 minutes.
  6. Remove from the oven and place on wire racks to cool.
