Ingredients
  • 32 oz. vegetable broth
  • 3 tablespoons olive oil
  • 1 pound spaghetti noodles (1 box)
  • 1 pint cherry tomatoes halved
  • ½ cup basil leaves roughly chopped
  • 1 small sweet onion roughly chopped
  • 3 garlic cloves minced
  • ½ cup heavy cream
  • salt and pepper to taste
  • A sprinkle of shredded parmesan cheese to garnish

Instructions
  1. Chop the onion, halve the cherry tomatoes and mince the garlic.
  2. Add the vegetable broth, pasta and olive oil to the pan.
  3. With the pasta submerged, add in the tomatoes, onion, garlic and basil leaves.
  4. Bring the contents to a boil, then reduce the heat to a simmer and cover the pan. Cook for 7 to 8 minutes, stirring occasionally.
  5. Turn off the heat, layer in the heavy cream and let pasta sit for 3 to 4 minutes.
  6. Just before serving, mix the pasta ingredients.
  7. Add salt and pepper to taste, and garnish with shredded Parmesan cheese.
