  • 1 cup beluga lentils rinsed
  • 3 cups vegetable or chicken stock
  • 1 teaspoon black food coloring
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • kosher salt to taste
  • White pepper to taste

Instructions
  1. In medium saucepan, combine lentils and stock. Bring to simmer and cook until lentils are just tender, 20–25 minutes. Drain and transfer to medium mixing bowl.
  2. Stir in black food coloring, lemon juice and olive oil. Season with salt and pepper to taste.
  3. Cover and refrigerate until ready to serve.
