Ingredients
For the spiced butternut squash syrup:
  • 1 1/2 cups water
  • 3/4 cup brown sugar
  • 1 cup granulated sugar
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 cup canned butternut squash purée
  • 3 Cinnamon sticks
  • 1 teaspoon vanilla extract
For the cider:
  • 1 cup spiced butternut squash syrup
  • 16 cups unfiltered apple cider
  • 1 orange peel only
  • 2 lemons peels only
To garnish:
  • Cinnamon sticks
  • Star anise
  • Dried oranges

Instructions
  1. To make spiced butternut squash syrup, combine water, brown sugar and granulated sugar in small saucepan. Bring to boil, stirring until sugars are dissolved.
  2. Reduce heat to simmer and whisk in ground cloves, ground nutmeg, ground ginger and butternut squash purée. Add cinnamon sticks and simmer, 8 minutes.
  3. Remove from heat and pour syrup through mesh strainer set over large glass bowl. Allow syrup to cool to room temperature before stirring in vanilla extract.
  4. To make cider, combine spiced butternut squash syrup, unfiltered apple cider, orange and lemon peels in crock pot set to “warm.”
  5. Serve warm cider in glass or ceramic mugs, garnished with cinnamon sticks, star anise and dried oranges.
