Instructions
  1. Remove the steak from the refrigerator. Sprinkle salt liberally on all sides. Allow to sit at room temperate for 20 to 30 minutes.
  2. Preheat the oven to 350F.
  3. Heat the olive oil in a good quality, oven safe cast iron skillet over high heat. Add the steak, sear on each side until browned, about one minute per side.
  4. Transfer skillet to the oven, cook for six minutes for medium rare, seven minutes for medium.
  5. Remove from oven, transfer steak to a cutting board. Allow to rest for five minutes before cutting.
