Ingredients
  • 2 cups mild cheese such as cheddar or Jarlsberg, cubed
  • 1 small red onion thinly sliced
  • 1 teaspoon mustard seeds
  • 1 teaspoon mixed whole peppercorns
  • 1/4 cup fresh parsley leaves whole
  • 1 to 2 cups olive oil

Instructions
  1. Place the cheese, onion, mustard, pepper and parsley in a Weck jar. Fill jar with oil, enough to cover the cheese.
  2. Place in the fridge for one week to marinate. Take it out three hours before serving as it tastes best when its room temperature.
  3. Serve with toasted country bread or just eat direct from the jar as snack.
