  • 2 tablespoons olive oil
  • 2 shallots minced
  • 1 garlic clove minced
  • 1 smoke sausage cubed
  • 1/3 cup sundried tomatoes sliced
  • 8-10 kalamata olives pitted & sliced
  • Salt + pepper to taste
  • 4 large eggs
  • 1 tablespoon fresh parsley
  • 1/2 cup old cheddar cheese grated

Instructions
  1. In a nonstick skillet over medium-low heat add the olive oil, shallots and garlic. Cook until the shallots soften, about 4-5 minutes.
  2. Stir in the smoked sausage, sundried tomatoes and kalamata olives. Season with salt & pepper. Cook for an additional 2 minutes & transfer mixture to a bowl.
  3. In a separate mixing bowl whisk together the eggs, parsley, cheddar cheese, salt & pepper until fluffy. Turn the heat up to medium & pour the egg mixture back into the seasoned non-stick skillet.
  4. Cook for 2-3 minutes, flip omelette and remove from heat. Let sit an additional minute to finish cooking.
  5. Transfer omelette to plate and pour tomato olive mixture over the omelette. Fold omelette in half and garnish with fresh parsley.
