Vanilla Cookie Recipe with White Chocolate and Strawberry Crumbs

Makes about 40 cookies

  • 1 cup unsalted butter, at room temperature
  • 1 cup sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 2 ½ cups all-purpose flour, sifted
  • 8 ounces high-quality white chocolate, melted
  • 1 cup freeze dried strawberries, crushed

Preheat the oven to 375 degrees F.

Combine the butter and sugar in the bowl of your electric mixer. Beat on medium speed until light and fluffy, about 2 to 3 minutes.

Beat in the egg, vanilla extract and salt until combined. Use a large spatula and stir in the flour until just combined.

Pack the dough into the cookie press and fit it with the desired design. Press the dough onto a baking sheet, leaving about 2 inches in between the cookies.

Bake the cookies for 10 to 12 minutes, or until just barely golden. Let cool completely. To make the white chocolate, add it to a glass bowl and microwave on 50% power for 30 seconds. Stir and microwave again for 30 seconds. Repeat until the chocolate is melted.

Once the cookies are cool, drizzle with the white chocolate and cover with the crushed strawberries. Let the chocolate firm up for 10 to 15 minutes before serving.
