Line a 9x9 inch square baking dish with parchment paper.
In a microwave safe bowl, melt together the chocolate and the coconut oil, until it’s smooth and creamy. I microwave the chocolate for 30 seconds on 50% power, stirring after each until melted.
In a large bowl, stir together the melted peanut butter, coconut oil, graham crumbs, sugar and vanilla extract. Stir until the mixture is combined. It won’t be totally smooth because of the graham crumbs. Pour the batter into the parchment lined baking dish. Spread it out evenly. Pour the chocolate over top. Refrigerate for 2 hours, then remove the bars in one square by lifting the parchment paper and slice them into squares. I love storing these in the fridge!
For a s’mores version, place a marshmallow on top and lightly char it. Enjoy!
