Place the peeled peaches in a blender with ½ cup of water and puree until smooth and no lumps remain. Strain the mixture through a fine mesh strainer, using a spoon to press out all of the juice and liquid.
In a large pitcher, add the frozen peach slices and lemon slices. Pour the strained peach juice into the pitcher, followed by the lemon juice, the remaining ½ cup of water and the honey. Start with 1/3 of a cup, taste and add more if needed.
Stir super well to help the honey all dissolve. Some may settle at the bottom, so make sure you stir each time you pour!
Fill a glass with ice (or more peach slices!) and pour in your lemonade. Garnish with fresh mint and it feels like summer.
