In fry pan, heat 1 tablespoon of olive oil over medium-high heat. Add yellow pepper, onion, garlic and ginger to pan, stir to combine and cook until tender, 4–6 minutes. Add vinegar and peaches, continue to cook until reduced by a third, 5–7 minutes. Pour mixture into food processor and process until smooth. Store in an airtight container for up to 5 days.
