Today is national waffle day! I can’t think of a better way to celebrate than to cozy up and enjoy a breakfast in bed.

With fall upon us, pumpkin spiced waffles seem like the perfect flavor of waffle to whip up. I am more than ready to watch the leaves turn, wrap myself in a chunky knit blanket & indulge in comfort food at home.

These waffles are so light, fluffy and crispy! I separated the eggs so I could whip the egg whites. This is an important step in achieving the perfect waffle texture. I also learned that adding a touch of cornstarch to the mix is what helps the waffles crisp up!

To create this batch I used the Nordic Ware Belgian Stovetop Waffle Iron. I love the idea of making them a more old fashioned way on the stove, plus storing the waffler is so easy.

  • 1 cup pumpkin puree not pie filling
  • 2 large eggs separated
  • 1/3 cup vegetable oil or melted butter
  • 1 1/2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/3 cup raw sugar
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions
  1. In a large mixing bowl whisk together the pumpkin puree, egg yolks, oil (or melted butter), whole milk, vanilla, and raw sugar until well combined.
  2. Sift in the flour, cornstarch, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt. Mix until the batter just begins to come together. Do not over mix.
  3. In a separate mixing bowl whisk the egg whites to stiff peaks. Gently fold the whites into the batter ensuring not to deflate them.
  4. Grease waffle iron, scoop batter onto iron and cook until golden brown. Repeat until no batter remains.
  5. Top with maple syrup, powdered sugar and whipped cream!
