Instructions
  1. In a large mixing bowl whisk together the pumpkin puree, egg yolks, oil (or melted butter), whole milk, vanilla, and raw sugar until well combined.
  2. Sift in the flour, cornstarch, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt. Mix until the batter just begins to come together. Do not over mix.
  3. In a separate mixing bowl whisk the egg whites to stiff peaks. Gently fold the whites into the batter ensuring not to deflate them.
  4. Grease waffle iron, scoop batter onto iron and cook until golden brown. Repeat until no batter remains.
  5. Top with maple syrup, powdered sugar and whipped cream!
