  • 3 1/2 cups all-purpose flour
  • 1 1/4 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon sea salt
  • 1 cup unsalted butter room temperature
  • 1 cup light brown sugar packed
  • 1 cup raw sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup macadamia nuts halved
  • 1 cup white chocolate roughly chopped
  • Coarse salt for sprinkling

Instructions
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, sift the flour, baking soda, baking powder, and sea salt. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter, brown sugar, and raw sugar. Add the eggs one at a time, followed by the vanilla extract.
  4. Slowly add the dry ingredients to the stand mixer & beat until evenly incorporated. Stir in the white chocolate and macadamia nuts.
  5. On a lined baking tray, scoop dough into desired cookie size. I use a small ice cream scoop so each cookie is the same size.
  6. Sprinkle with a touch of coarse salt.
  7. Refrigerate cookie dough until the dough has firmed and bake for 8-10 minutes or until the edges just begin to brown.
  8. Let cool on a baking rack and enjoy!
