  • sesame seeds

  • 1 red bell pepper thinly sliced to garnish

  • peanut oil to sear tuna

  • 3 tablespoons wasabi powder
  • 2 tablespoons water
  • 1/4 cup sour cream
  • 2 tablespoons half and half

Instructions
  1. Mix together the wasabi powder and water until well combined. Add in the sour cream and half and half. Stir until smooth. Refrigerate until you are ready to serve.
  2. Prepare the tuna by cutting it lengthwise into three triangles. Season the tuna with salt. In a separate bowl mix together equal amounts of pepper, poppy seeds, and sesame seeds. Then roll each piece of tuna into the seed mixture. Heat a large sauce pan on high heat with peanut oil until hot, then carefully sear each side of the tuna in the oil. Cook through about a 1/4 inch leaving the inside rare and red. Chill the pieces of tuna in the refrigerator.
  3. Once chilled, slice the tuna into long, thin pieces for serving on a sesame cracker.
  4. Add the Ahi tuna to a sesame cracker and drizzle the wasabi cream over the tuna and cracker in a straight line of motion. Garnish with finely sliced red bell peppers, green onions, and fresh cilantro. Serve.
