Happy summer, friends! Can you believe we are already halfway through the season?! One more month left of summer nights spent at the cottage or the campground sitting around the bonfire.

One of my favorite treats of summer is a classic campfire s’more. But when the summer days start to come to an end that doesn’t mean the s’mores have to as well. I have taken the three components of a classic s’more to make one ultimate cookie that will satisfy any craving.

This cast iron skillet cookie will allow you to enjoy the best of s’mores all fall and winter long. It features chunks of milk chocolate, caramelized marshmallows and a cross between a graham cracker and chocolate chip cookie base. You can slice it up and enjoy it as you would a cookie, but I opted to serve mine with a big scoop of vanilla ice cream too!
