Ingredients
For the thyme simple syrup:
  • 1 cup water
  • 1 cup granulated sugar
  • 2 sprigs thyme
For the punch:
  • 16 ounces Aperol
  • 16 ounces grapefruit juice
  • 8 ounces thyme simple syrup
  • 2 bottles sparkling wine
  • 1 ruby red grapefruit sliced into wheels
  • 1 blood orange sliced into wheels
  • 1 lemon sliced into wheels
  • 12 kumquats sliced into wheels
  • 4 sprigs thyme

Instructions
  1. For the thyme simple syrup, combine water and granulated sugar in small saucepan over medium heat. Bring to boil, gently stirring until sugar is dissolved. Remove from heat and add thyme sprigs. Cool to room temperature, remove thyme sprigs and refrigerate until needed.
  2. For the punch, combine Aperol, grapefruit juice and thyme simple syrup in large pitcher and refrigerate at least 2 hours.
  3. Just before serving, combine chilled mixture with sparkling wine and about 10 ice cubes in punch bowl or drink dispenser. Garnish punch with grapefruit, blood orange and lemon wheels, and half of the kumquat wheels.
  4. Garnish individual drinks with sprigs of thyme and remaining kumquat wheels.
Recipe Notes

Thyme simple syrup can be made a few weeks in advance and refrigerated in airtight container.
