Instructions
  1. Halve honeydew melon and remove seeds. Scoop flesh into a blender and purée until smooth.
  2. Pass through sieve and refrigerate for 1–2 hours.
  3. Just before serving, add thyme to honeydew juice and steep in refrigerator for 10-15 minute. Before pouring cocktails, remove thyme stems.
  4. To serve, fill glasses a third of the way full with infused melon juice; gently top off with prosecco and garnish with a thyme sprig.
