  • 4 roma tomatoes chopped
  • 1/2 small read onion finely chopped
  • 1 cloves of garlic minced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 2 tablespoons fresh basil chopped
  • Sea salt and pepper to taste
  • Freshly grated Parmesan to garnish

Instructions
  1. Toast sliced baguette while you prepare the tomato topping. In a bowl add tomatoes, red onion, garlic, olive oil, balsamic vinegar, basil, salt and pepper. Toss to combine.
  2. Top each slice of bread with a tablespoon of the mixture. Grate fresh parmesan over the crostini before serving.
