Ingredients
  • 2 tbsp olive oil
  • 1 1/2 cups onion diced
  • 2 garlic cloves finely minced
  • 1 1/2 cups carrots chopped
  • 1 1/2 cups celery stalks chopped
  • 4 cups turkey stock
  • 2 cups water
  • 1 cup egg noodles or mixed wild rice
  • 2 cups leftover turkey diced
  • salt and pepper to taste
  • Parsley for garnish optional
  • Squeeze of lemon juice optional

Instructions
  1. In a large pot or dutch oven heat olive oil over medium high heat. Add onion and garlic and cook until onion is translucent. Make sure to control the heat to prevent garlic from burning.
  2. Add carrots and celery and sauté for a few minutes.
  3. Add stock, water, and noodles or rice. Bring to a boil; reduce heat to low and simmer for 20 -25 minutes.
  4. Add cooked turkey and simmer for 5 minutes.
  5. Season with salt and pepper to taste.
  6. Garnish with parsley and squeeze a bit of lemon juice before serving.
