Toasted Marshmallow Sweet Potatoes

It’s hard to believe I’ve already started menu planning for the holidays, but I can’t resist, especially now that Zelda can really enjoy the food this year. Toasted Marshmallow Sweet Potatoes are a kid-friendly upgrade to traditional mashed potatoes and I love having them on our Thanksgiving table! We started this tradition a few years ago (lucky for Z) and this recipe gets major bonus points for being super easy. Someday Zelda will be in charge of creating it!
Little babes are immediately attracted to the marshmallows (can you blame them?) and it is so important to involve them in the kitchen. It gives them a sense of ownership over the meal! There’s nothing sweeter than seeing how proud they are of their culinary contribution when it comes time to eat. What’s your favorite kid friendly dish to make with your babes during the holiday?
Ingredients
- 4 Sweet Potatoes
- 1/4 Cup Brown Sugar
- 3 Tablespoons Vanilla Extract
- 2 Teaspoons Cinnamon
- 1/4 Cup Milk
- 1/4 Cup Butter
- 2 Eggs
- 2 Tablespoons Flour
- 1 Teaspoon Salt
- 1 – 2 Cups Mini Marshmallows
Directions
- Preheat the oven to 375 degrees.
- Peel the sweet potatoes and bring a pot of water to boil on the stove. Add the sweet potatoes and boil for 20-30 minutes; drain.

- Divide the mixture evening among 2-3 small glass dishes. Cover the tops of each mix with mini marshmallows and bake for 10-15 minutes, or until the marshmallows are golden brown.
- Serve to littles!
