Sourdough Grilled Cheese Recipe

I may be 30 years old, but I still love an ooey-gooey grilled cheese sandwich, and (of course) my kiddos do too. But why stop at just cheese and bread? Today I am sharing how I make one of our favorite variants of the sandwich: crusty sourdough bread, three different kinds of cheese, crispy bacon, juicy tomato slices, and avocado all come together in this fun twist on a classic favorite.

INGREDIENTS: (per sandwich)

  • 2 sliced sourdough bread
  • 2 slices sharp cheddar cheese (thin sliced)
  • 1 or 2 slices of Swiss cheese
  • 2- 3 pieces of cooked bacon
  • 3 slices tomato
  • 4 slices of thinly sliced avocado
  • Crumbled feta to taste
  • Approximately 1 tbsp whipped feta butter (see below)

*You will also need cooking spray for your pan, and a good grill pan (preferable) or fry pan. I love the look of the grill marks achieved on this pan from Le Creuset available at Crate & Barrel.

WHIPPED FETA BUTTER INGREDIENTS:

  • 1/4 cup butter (softened/ room temperature)
  • 1 tbsp plain cream cheese
  • 1 and 1/2 tbsp crumbled feta cheese

INSTRUCTIONS:

  1. Let’s start off by making your whipped feta butter. To do this combine softened butter and cream cheese in a bowl. Whip together by hand until well-combined. Then, add the crumbled feta and again mix. You will have some lumps that will remain, but try and get it as smooth and whipped as possible. Set aside.
  2. Spray your pan with some cooking spray and then start heating the pan on medium heat.
  3. Next, take two slices of your sourdough and spread a little butter on one side only of each of your pieces of bread.
  4. Then, take your cheddar and Swiss and divide it between the two halves.
  5. Place each slice of your bread, butter down on your pan. *I always cook my grilled cheese sandwiches “open face” style to start to ensure that the cheese melts and that the bread gets all toasty.
  6. Once the cheese has started to melt and bread is semi-toasted, layer bacon, tomato, avocado and feta cheese on one side of the sandwich, lift the other side over to close the sandwich and continue to cook for a couple more minutes until bread is toasty and golden.
  7. Remove from heat and serve immediately. Or, if making several – simply remove from heat and place somewhere to stay warm, and repeat the process with subsequent sandwiches.
  8. Enjoy!

These delicious grilled cheese sandwiches are perfect any day, for kids and adults alike. Make several, because you may just want another (and so will the little ones)!
