  • Ingredients:
  • Juice of 3 limes
  • 1/2 cup fresh mint leaves
  • 3 tbsp. cane sugar
  • 3/4 cup Bacardi white rum
  • 1 10-oz. bottle club soda
  • Directions:
  • 1. Place lime juice, mint leaves and sugar in a pitcher and muddle with muddler or back of wooden spoon.
  • 2. Fill pitcher with crushed ice and pour in rum and soda. Stir well to combine. Pour in tall, chilled glasses and serve.

Grilled Corn

Grilling time: about 8 minutes

Servings: 6

  • Ingredients:
  • 6 ears fresh corn, husks on
  • Olive oil, to drizzle
  • Sea salt, cracked black pepper, to season
  • 1 cup cilantro, leaves roughly torn
  • 2 limes, cut in half
  • Directions:
  • 1. Heat grill to medium-high. Peel back husks and twist into a handle. Remove corn silk. Place corn on large platter and drizzle with olive oil to coat. Season with salt and pepper.
  • 2. Place corn on hot grill and turn them over every 2–3 minutes until slightly charred and cooked through, approximately 8 minutes.
  • 3. Remove corn from grill and place on platter. Sprinkle with cilantro leaves and drizzle with a little more olive oil. Squeeze limes over corn and serve.

Grilled Tri-Tip Steak

Marinating time: 8–24 hours

Grilling time: about 12–16 minutes per steak

Servings: 6–8

  • Ingredients:
  • 1 tbsp. dried oregano
  • 1 tsp. dried garlic powder
  • 1 tsp. dried chili flakes
  • 1 tsp. coarse sea salt
  • 1 tsp. black pepper
  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 2 tri-tip steaks (about 2 lbs. each)
  • Sea salt, cracked black pepper, to season
  • Directions:
  • 1. In small bowl, mix oregano, garlic powder, chili, salt and pepper with wooden spoon. Add olive oil and balsamic vinegar and stir to form a marinade. Place meat in a ceramic or glass dish and pour in herbed marinade. Cover and place in refrigerator for 8 to 24 hours.
  • 2. Remove meat from refrigerator and let it come to room temperature. Heat grill to medium-high.
  • 3. Place meat on grill for 6–8 minutes on each side for rare; continue to cook if you prefer medium to well-done.
  • 4. Transfer meat to a board, cover and let it rest for 10 minutes. Slice meat and sprinkle with sea salt and pepper to taste. Serve immediately.

Spicy Cheese Quesadillas

Servings: 6–8

  • Ingredients:
  • 12 flour tortillas
  • 2 cups spiced Jack cheese, shredded
  • 8-oz. tub fresh spicy salsa
  • 1 small bunch cilantro, roughly chopped
  • Olive oil to drizzle
  • 4 limes, halved
  • Coarse sea salt
  • Directions:
  • 1. Heat grill to medium. Lay tortilla on work surface and sprinkle with small handful of cheese, spoon on some salsa and top with another tortilla. Repeat with the remaining tortillas. You will have 6 stuffed tortillas.
  • 2. Grill tortillas for 2 minutes on each side, or until cheese has melted and tortillas are crispy. Remove to cutting board and cut each into quarters. Sprinkle with chopped cilantro. Drizzle with olive oil and squeeze limes over them. Finish with sprinkle of coarse sea salt. Serve immediately.

  • 1. Heat grill to medium-high. Cut scallions in half lengthwise. Place on large platter and drizzle with olive oil to coat. Season with salt and pepper.
  • 2. Place scallions on hot grill and cook for 2 minutes; turn them over and cook for another 2 minutes until slightly charred.
  • 3. Remove scallions from grill and place on platter. Drizzle with a little more oil and serve.
