Lemon Shandy Beer Ice Cream Recipe
There are two things that taste better in the summer: homemade ice cream and beer cocktails. It’s not just the triple digit heat that makes these treats so indulgently gratifying, it’s also the people. Summer people are the best kind. Summer people wear flip-flops, cook food over open flames, stay up late and share drinks on the patios. That’s the real reason why things just taste better in the summer. It’s who we share it with.
When you have these summertime people over to your patio, it’s time to celebrate. There are, after all, only a little over 90 days to your summer. Enjoy every one of them.
Homemade ice cream has a decadent feeling. It’s a reminder this season urges you to slow down, take a second to travel, enjoy a moment in the sun, connect with people that can get brushed aside when the weather cools and your life speeds up. This is when I break out the KitchenAid, use my ice cream maker attachment and experiment. Lemons? Fruit? Herbs? Beer? Nothing is off limits for your beer ice cream recipe. After all, ice cream is perfect for good flavor experimentation.
Mixing your beer with non-beer substances is also acceptable during this time. In part to decrease your overall alcohol consumption in an effort to prevent you from becoming a cautionary tale and in part because the produce you haven’t seen in eight months is now all around you and you want to play with it. Feel free. Maybe it isn’t what the beer-geek-next-door would do, but who cares. If you want to add some sparkling lemonade, grapefruit juice or an ice cream base to your beer, do it.
It’s your summer. It’s your 93 days. Enjoy it how you see fit. For me, it’s homemade ice cream, patio beer consumption and those friends that show up to my house no matter what the weather gives us.

Lemon Shandy Beer Ice Cream Recipe
Ingredients
- • 3 large lemons
- • 2 cups heavy whipping cream
- • 1 2/3 cups sugar
- • 1/2 teaspoons salt
- • 7 large egg yolks
- • 1 tablespoon cornstarch
- • 1 cup pale ale or summer
ale
Instructions
- Zest one of the lemons with a microplane, and set aside one tablespoon of zest. Juice the lemons, and set aside 1/3 cup lemon juice.
- In a large bowl add the yolks, cornstarch and lemon juice. Whisk until well combined.
- While continuously whisking the yolk mixture, slowly pour the cream into the yolks, whisking until well combined. Return mixture to the pan, stir in the beer. Return to medium heat, stirring frequently until slightly thickened (about eight minutes).
- Add to a large bowl, refrigerate until chilled (about four hours).
- Churn in an ice cream maker according to manufacturer’s specifications until the mixture has reached a soft serve consistency (about 12 minutes).
- Add to a freezer safe container, freeze until set (about one hour).
