Using store-bought croissant dough makes quick work of this jalapeño popper pigs in a blanket appetizer that’s loaded with flavor.

  • 4 slices thick cut bacon
  • 4 ounces cream cheese, at room temperature
  • â…“ cup shredded sharp cheddar cheese
  • 2 ounces canned diced jalapeños
  • 8 ounces store-bought croissant dough
  • 20 cocktail sausages (or 7 hot dogs, each cut into thirds)

  1. Preheat the oven to 400°F. Line a baking sheet with a silicone baking mat or parchment paper.
  2. Cook the bacon in a skillet over medium-high heat until crispy, 3–4 minutes per side. Transfer to a paper towel-lined plate and, when cool enough to handle, break into small pieces.
  3. In a mixing bowl, stir together the cream cheese, cheddar cheese, jalapeños and crumbled bacon.
  4. On a lightly floured work surface, use a rolling pin to roll out the croissant dough. With your fingertips, press the perforated seams together to create a rectangle with the long side facing you. Use an offset spatula to spread the cheese mixture in an even layer over the dough.
  5. Use a pizza cutter or knife to cut the dough from top to bottom into 10 even slices. Then cut the slices in half, crosswise. You should now have 20 rectangles of dough, approximately 1 inch by 3 inches.
  6. Place a cocktail sausage or hot dog on top of each rectangle of dough and then roll up to enclose. Place the assembled jalapeño popper pigs in a blanket seam sides down on the prepared baking sheet. Transfer to the oven and bake until golden brown, about 15 minutes. Cool the jalapeño popper pigs in a blanket slightly and serve.

Always put bacon into a cold pan and then turn on the heat. This will help with the amount of bacon grease splatters.

A can of diced jalapeños is 4 ounces. Two ounces will add a nice subtle kick to the jalapeño popper pigs in a blanket. If you prefer a super-spicy dish, add the entire can.

You can prepare the jalapeño popper pigs in a blanket a few hours ahead and keep them in the refrigerator. Don’t bake until you are ready to serve, as they are best right out of the oven.

Using a silicone baking mat or parchment paper will ensure the dough doesn’t stick to the baking sheet.

If you use hot dogs, you will have one extra piece.
