Lemongrass Burgers with Spicy Napa Cabbage Slaw Recipe

Up until now, you may have only seen lemongrass in Thai curries, but it’s also traditional in Vietnamese cooking to pair it with beef. So we’re going back to Southeast Asia for this slaw-mounded, spicy mayo-slathered lemongrass burger, which gets tons of bold, bright flavors from things like soy sauce, ginger, lime and plenty of chilies.

ingredients

  • Spicy Seasoned Mayo
  • ½ cup mayonnaise
  • 1 teaspoon sriracha sauce
  • 1 teaspoon garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh lime juice
  • Salt and pepper to taste
  • Spicy Napa Cabbage Slaw
  • 2 cups Napa cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 1–2 jalapeños, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 2 teaspoons grated ginger
  • 2 teaspoons fresh lime juice
  • 1 teaspoon sriracha sauce
  • ¼ teaspoon salt
  • 1 tablespoon sesame seeds
  • Lemongrass Burgers
  • 1 pound ground beef
  • 2 tablespoons lemongrass, minced
  • 2 teaspoons garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon fish sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • To Serve
  • 4 brioche buns, halved
  • ¼ cup butter, softened

directions

  1. To make the Spicy Seasoned Mayo sauce, in a small bowl, mix the mayonnaise, sriracha sauce, garlic, sesame oil and lime juice. Season with salt and pepper and set aside.
  2. To make the Spicy Napa Cabbage Slaw, in a large bowl, combine the Napa cabbage, carrots, jalapeño and cilantro. Then, in a small bowl, whisk together the sesame oil, rice vinegar, honey, soy sauce, ginger, lime juice and sriracha sauce. Taste and season with salt. Pour the dressing over the cabbage mixture and toss to combine. Sprinkle the sesame seeds over the slaw. Chill in the refrigerator until ready to serve.
  3. To make the Lemongrass Burgers, in a large bowl, mix together the ground beef, lemongrass, garlic, ginger, fish sauce, brown sugar, sesame oil, salt and pepper.
  4. Form the ground beef mixture into four equal-sized patties and drizzle with olive oil.
  5. Preheat your grill to medium-high heat.
  6. Place the patties on the preheated grill and cook for 3–4 minutes per side or until they are cooked to your desired doneness.
  7. During the last few minutes of cooking, butter the brioche bun halves and place them cut-side down on the grill until lightly toasted.
  8. Serve the lemongrass burgers on the toasted brioche buns slathered with spicy mayo sauce and topped with the spicy Napa cabbage slaw.
