The high-carbon stainless steel is then polished by hand to create a satin finish that reduces drag while cutting and releases food easily. Beautifully balanced and strong, the essential knife is finished with a double-riveted handle polished to a glossy ebony finish.
Each exquisite Shun knife is carefully crafted in a 100-step process inspired by ancient sword smiths. The amazing razor-sharp knives are created in Seki City, Japan's 700-year-old center for samurai swords.
