Ingredients
- 2 cups dark brown sugar
- ¼ cup maple syrup
- ¼ cup bourbon (optional)
- 1 pre-cooked spiral ham, bone in
- 2 fresh oranges, sliced ½” thick
- 3 fresh lemons, sliced ½” thick
- 24 whole cloves
- Store-bought candied orange slices*
- Bay leaves, fresh or dried
Directions
- Preheat the oven to 325℉.
- To make the glaze, place the sugar and maple syrup in a small saucepan and add 1½ cups of water. Bring to a boil, then reduce to a simmer and cook for about 5 minutes, stirring continuously, until all the sugar has dissolved. Remove from heat and stir in the bourbon, if using.
- Lay the fresh orange and lemon slices in the bottom of a large roaster. Place the ham on the roasting rack and score the fat on the top in a diamond pattern. Brush the glaze over the ham and stud with cloves. Decorate with store-bought candied orange slices and bay leaves.
- Cook the ham for 15 minutes per pound, until the internal temperature reaches 145℉.
*Candied citrus slices are available online as well as at many high-end supermarkets.
