Ingredients
- 1 pound boneless chicken thighs
- ¾ cup of Ko-Rican Sauce (recipe below)
- 2 tablespoons sweet paprika
- 2 tablespoons dried oregano
- 2 tablespoons dark chili powder
- 2 tablespoons madras curry powder
- ¼ cup kosher salt
- ½ cup white distilled vinegar
- 15 garlic cloves
- ½ cup olive oil
Ko-Rican Sauce
Directions
- For marinade, combine sweet paprika, oregano, dark chili powder, madras curry powder, salt, vinegar, garlic and olive oil into a food processor and pulse for 2 minutes until completely smooth.
- In a medium-size mixing bowl, combine marinade and Ko-Rican sauce and put in refrigerator overnight. Place the marinated chicken on the smoker racks. Set the smoker to 225ºF smoke using either cherry wood or apple wood. Smoke chicken for 2 hours or until internal temperature of the chicken thigh is 165ºF.
