Ingredients
- ½ cup water
- ½ cup sugar
- ½ cup fresh lemon juice
- ½ cup fresh raspberries
- 2 cups water
- 3 ounces champagne or Prosecco
- 3 fresh raspberries
- Lemon twist
Directions
- To make the raspberry lemonade, combine water and sugar in a small pot to make a simple syrup; bring to a boil over medium heat. Once sugar has dissolved, turn off heat. Let cool to room temperature. Combine lemon juice and raspberries in a small mixing bowl and muddle the raspberries to release juice. Strain into a pitcher, removing all seeds. Add simple syrup and 2 cups cold water. Chill.
- To make the cocktail, add 3 ounces of the raspberry lemonade to a chilled coupe glass. Top with champagne or Prosecco; garnish with raspberries and lemon twist.
