Ingredients
- Ginger beer
- Fresh-squeezed or pre-made grapefruit juice
- Rosemary simple syrup (see recipe below)
- 1 (750mL or 25 ounce) bottle dry brut champagne (you can substitute sparkling water for a non-alcoholic version of this mimosa)
- Fresh rosemary, for garnish
Directions
- In a large carafe, combine equal parts ginger beer and grapefruit juice. Sweeten with rosemary simple syrup to your desired level of sweetness (we used ½ cup).
- Fill each glass with equal amounts of the cocktail mixer and dry brut champagne (or sparkling water if making a mocktail). Garnish with a sprig of fresh rosemary.
