- Extra virgin olive oil

Directions
- Drizzle corn with olive oil and season with barbecue rub. Set the smoker to 225ºF using cherry wood or apple wood. Smoke corn for 2 hours.
Smoked Cauliflower Crowns

Ingredients
- 1 cup cauliflower crowns
- Chili oil
- Curry powder
- Salt, pepper, to taste
Directions
- Cut crowns from a head of cauliflower; discard stems. Toss cauliflower crowns with chili oil; season with curry powder, salt and pepper to add a little zip. Set the smoker to 225ºF using cherry wood or apple wood. Smoke cauliflower crowns for 2 hours.
Smoked Grape Tomatoes
Smoking concentrates the tomato flavors and brings out the spiciness of the chili.

- Grape tomatoes (as many as desired)
- Chili flakes
- Sugar
- Salt, to taste
Directions
- Season the grape tomatoes with a mixture of chili flakes, sugar and salt. Set the smoker to 225ºF using cherry wood or apple wood. Place tomatoes in a grill basket or wrap in foil and smoke for 2 hours.
Lemongrass Chili Sauce

- 1 teaspoon garlic, minced
- 1 teaspoon ginger, peeled, minced
- ¼ cup lemongrass, minced
- 1 cup sweet chili sauce
- ¼ cup fish sauce
- ¼ cup sambal oelek chili paste
- 2 tablespoons toasted sesame oil
Directions
- Combine garlic, ginger, lemongrass, sweet chili sauce, fish sauce, sambal oelek chili paste and sesame oil in a bowl and whisk until blended.
