S’mores Cookie Skillet
Happy summer, friends! Can you believe we are already halfway through the season?! One more month left of summer nights spent at the cottage or the campground sitting around the bonfire. One of my favorite treats of summer is a classic campfire s’more. But when the summer days start to come to an end that doesn’t mean the s’mores have to as well. I have taken the three components of a classic s’more to make one ultimate cookie that will satisfy any craving.
This cast iron skillet cookie will allow you to enjoy the best of s’mores all fall and winter long. It features chunks of milk chocolate, caramelized marshmallows and a cross between a graham cracker and chocolate chip cookie base. You can slice it up and enjoy it as you would a cookie, but I opted to serve mine with a big scoop of vanilla ice cream too!
S'mores Skillet Cookie Recipe
Ingredients
- 1/2 cup unsalted butter softened
- 1 cup light brown sugar packed
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 egg
- 1 3/4 cups all-purpose flour
- 1/2 cup graham cracker crumbs
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 cups milk chocolate roughly chopped
- 1 cup marshmallows
- 1 pint vanilla ice cream for serving
Directions
- Preheat oven to 350 degrees.
- Cream the butter and brown sugar until light and fluffy. Add in the honey, vanilla extract and egg. Beat until well combined.
- Sift in the flour, graham cracker crumbs, salt, baking soda & baking powder. Beat until the flour and graham is evenly incorporated.
- Fold in the milk chocolate chunks & marshmallows.
- In a 8 or 9 inch cast iron skillet add the dough. Press the dough down until it is even and flat.
- Bake at 350 degrees for 20-25 minutes. Let cool slightly before serving.
- Serve with a scoop ice cream, honey or chocolate sauce & whipped cream if desired!
