Homemade Hot Cocoa Mix Recipe

Ingredients
- 2 1/4 cups sugar
- 2 cups dutch process cocoa powder
- ½ teaspoon salt
Directions
- Whisk together the sugar, cocoa and salt.
- Store in a sealed container in a cool, dark place.
- To serve, heat 1 cup of milk. Add about 3 tablespoons of the hot cocoa mix to the bottom of the glass and whisk in the warm milk. Serve immediately!
Hot Chocolate Recipe

Ingredients
- 3 cups whole milk
- 1 cup heavy cream
- 12 ounces high-quality dark chocolate (I like a 70%)
- pinch of salt
- pinch of cinnamon
- 2 teaspoons vanilla extract
Directions
- Heat the milk and cream in a saucepan over low heat. As soon as bubbles start to form on the edges, whisk in the chocolate and continue to stir until it melts and is thick. It will take a few minutes. Whisk in the salt and cinnamon.
- Remove the hot chocolate from the heat and stir in the vanilla extract. Serve in about 4 to 6 ounce servings – this is a luxurious, rich sipping chocolate!
Vanilla Bean White Chocolate Hot Chocolate Recipe

- 1 tablespoon vanilla bean paste
Directions
- Heat the milk and cream in a saucepan over low heat. As soon as bubbles start to form on the edges, whisk in the while chocolate and continue to stir until it melts and is thick. It will take a few minutes. Whisk in the salt.
- Turn the heat off under the hot and stir in the vanilla bean paste. Serve this drink in 4 to 6 ounce servings.
Homemade Marshmallows Recipe

Ingredients
- 2 packets of gelatin
- 8 tablespoons of cold water
- 1 1/2 cups granulated sugar
- 1/3 cup cold water
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- powdered sugar, for sprinkling
Directions
- Place the gelatin in a small bowl and stir in the 8 tablespoons of cold water. Set aside.
- Spray an 8×8 pan with nonstick spray, then sprinkle some powdered sugar in the pan and shake well, dispersing it all over the pan, covering the entire thing.
- In a small saucepan, combine the remaining cold water and sugar. Heat over medium heat, stirring constantly until the sugar is dissolved and bubbly, about 3-4 minutes.
- Stir in the gelatin mixture, whisking, and bring it to a boil. Once boiling, immediately remove from heat.
- Add to the bowl of an electric mixer attached with a whisk. Let sit and slightly cool.
- Add in vanilla extract and salt.
- Beat on medium-high speed for 10-15 minutes, until white and glossy and shiny and thick. Spread in the 8×8 pan and top with a sprinkle of powdered sugar if desired. Let sit for about 4 hours, or even overnight.
- For Peppermint Marshmallows: Add in ½ teaspoon peppermint extract with the vanilla extract. Stir a drop or two of red food coloring into the marshmallow mixture when placing it into the pan.
- For Chocolate Marshmallows: Add in 3 to 4 tablespoons of dutch process cocoa powder while beating the marshmallows.
