ingredients
- 5 cloves garlic, chopped
- ¾ cup extra-virgin olive oil
- 2 cups panko breadcrumbs
- ¼ cup parsley, chopped
- 2 tablespoons tarragon
- ½ cup spinach, chopped
- 1 Meyer lemon, zest and juice
- 1 teaspoon black pepper, ground
- Fresh horseradish
- 2 medium green zucchini, cut into ¼-inch rounds
- 2 medium yellow squash, cut into ¼-inch rounds
- 4 squash blossoms, stem removed and chopped (optional)
- 1 teaspoon nutritional yeast
- Extra-virgin olive oil as needed
- 1 teaspoon red chili flakes
- 2 teaspoons salt (or to taste)
directions
- Preheat your oven to 350°F using the convection setting, if available.
- In a small saucepan, simmer ¾ of the garlic in the olive oil over low heat until the garlic is golden brown. Combine the cooked garlic and oil with the panko, herbs, spinach, lemon zest, black pepper and horseradish. Mix well.
- Dress the zucchini, yellow squash and squash blossoms with the nutritional yeast, the remaining garlic, lemon juice, a little more olive oil, chili flakes and salt to taste. Allow this mixture to sit for 20 minutes before straining and removing the liquid.
- Arrange the sliced zucchini and squash in your Birdie Stoneware Baking Dish by Daniel Humm. Top with a thin layer of the panko breadcrumb mixture, making sure to pack it down gently.
- Bake for 15–25 minutes, until the zucchini is tender and the breadcrumbs are brown.
- Top the Zucchini Rockefeller with more grated horseradish and the lemon zest.

Squash blossoms are one of the most special seasonal ingredients. If you have them, it really makes this Zucchini Rockefeller recipe delicious as well as beautiful. If not, the dish can easily be made without them.
